- Autumn Colors Salad
- aka Sweet Potato/Apple Salad

- about 4 cups peeled, cubed sweet potatoes or yams
- 1 apple, skin on, chopped
- 2 stalks celery, sliced
- 1 small red onion, chopped
- 1 teaspoon fresh ginger, grated
- rice vinegar to taste

- steam potatoes til soft, not mushy
- toss all ingredients lightly
- dress with vinegar to taste
- chill
